September marks the beginning of a brutal yet academically satisfying time for me. Not only am I back in grad school as a student this semester, I’m also teaching three liberal arts courses while still maintaining my disciplinarian role at work. For those of you unaware, I work in higher education at a New York University. This past weekend while everyone was soaking up the last bit of beach time and making memories, I was at my home office working on syllabi, writing papers and assignments and prepping my own daughter for her new school year. As my personal history would have it, this would be the perfect platform for pigging out on snacks. Knowing that this hectic period was coming my way, I made the conscious effort in deciding to shop for healthy snack foods. While at my local ShopRite supermarket, I reached out for fruits and to satisfy my sweet tooth, I swapped my high caloric go-to’s for Weight Watcher snacks. I couldn’t decide on which flavor to get so I ended up buying the red velvet and lemon creme cakes.
Living in New York City, I’m always on the run and can’t fuss with inconvenience. These snacks are small enough to fit in my work/school bag but hold a powerful punch. I know what you’re thinking, if it’s healthy, it must not be tasty. I wouldn’t steer you wrong, these cakes taste amazing! Not at all of what you think when you hear healthy alternatives. At home I like to have mine with a glass of cold milk or white wine (high-stress moments) but on the run, a bottle of water is the perfect pairing.
